feat(k8s): Add Redis deployment for production

- Add k8s/redis.yaml with Redis 7 Alpine deployment
- Add REDIS_HOST and REDIS_PORT to configmap
- Redis configured with 200MB max memory and LRU eviction
- 1GB persistent volume for data persistence
